Chardonnay

White Wine by A by Acacia from California. A by Acacia 2006 Chardonnay expresses the vibrant fruit character of grapes grown in California's cool, windswept Monterey County. Bright citrus, pineapple, pear and tropical fruit notes perfume the aromas and beautifully balanced flavors. Hints of spice and vanilla oak weave through the fruit, and then linger on the finish. Crisp natural acidity structures the flavors, balanced with rich, silky texture from sur lie aging. Lightly chill this Chardonnay, then pull the cork and enjoy with your favorite entrees or simply to sip with friends. A by Acacia's winemaker, Tom Westberg, likes to match this wine with smoked salmon tossed with creamy pasta, pate on a baguette or sauteed scallops.

White Wine by Au Bon Climat from Central Coast, California. The 2006, like the '05, is a truly alternative style of California white wine. The wine has not been compromised in quality at any step in its production. Low yielding, high quality vineyards (Bien Nacido, Rancho Vinedo, and Los Alamos) are hand-pruned, leaf thinned by hand, sustainably farmed, and hand picked. The grapes are whole cluster pressed, unsettled (a Burgundian tradition, like the weather), straight to Francois Freres small barrel for primary fermentation and malo-lactic, topped once a week by hand, sur lie, and bottled after a careful fining and no filtration. All of the French wood is neutral. This wine is fruit driven, lees enhanced, texturally sophisticated, balanced, bright, complex, and concentrated from yields under 3 ton per acre. Remember when Chardonnay had stone fruit (not tropical), firm acidity, brightness, earthiness, minerality, and no vestige of heaviness? Au Bon Climat certainly does! Here is your alternative. Chardonnay is not an aromatic variety, it needs wood and lees, but can be vinified in an elegant, fresh, and food friendly fashion.

White Wine by Beringer from Napa Valley, California. Each Chardonnay lot was kept separate throughout the aging process to retain the individual flavor characteristics. After gentle crushing, Winemaker Laurie Hook fermented the juice in French oak barrels (77 percent new) to enhance the natural richness in the wine. The lees were stirred weekly to develop a nutty-toasty character and fully integrate the oak flavors, encouraging a good balance. All of the wines were put through malolactic fermentation to encourage a lush creaminess. After 9 months aging, Winemaster Ed Sbragia and Winemaker Laurie chose the richest, most expressive lots and blended them to create an intensely aromatic and flavorful wine featuring lemon zest, sweet vanilla, baked apple and spicy oak aromas layered with rich flavors of pineapple, and hints of minerality and spice that lead into a long and bright citrus-infused finish.
