Red Wine by Alexander Valley from Sonoma County, California. A late ripening concentrated the flavors while also assuring that the ying and yang of the fruit-the acid and sugar levels-were in perfect balance. The result is a rich, juicy Cab with an expressive nose of cassis and spice. Flavors of black cherry and cocoa dominate this silky wine, but there are also hints of eucalyptus and mint. The 2005 is 90 percent Cabernet Sauvignon with small amounts of Merlot, Cabernet Franc and Petit Verdot filling out the remainder of the blend. Try this wine with braised short ribs or a creamy Camembert.

Red Wine by Arrowood from Sonoma County, California. Arrowood 2002 Reserve Cabernet Sauvignon is an outstanding California Cab from start to finish. In 2002, when the harvested grapes went through the press, Richard Arrowood noted the juice's intense black fruit flavors and unbelievable aromatics and colors. He foresaw a blockbuster year for this fabulous vintage and he was right on the money. The majority of fruit for the 2002 Reserve Cabernet Sauvignon was grown on hillside vineyards in the Sonoma Valley; a region known to yield some of the most concentrated and balanced Cabernet Sauvignon in Sonoma County. After aging lots separately in seasoned French oak barrels and a small amount of American oak barrels for 23 months, only the finest was selected to blend and return to French oak barrels for another five months of aging. The resultant wine is a perfect vision of violet with purple hues and tones of brick-red around the edges. It shows certain richness and there is no shortage of complexity. Rich aromatics of black cherry, cassis and leather introduce the palate to a symphony of flavor profiles with black fruit in the forefront of undertones and overtones of plump, ripe fruit in this full bodied wine. The tannins are in harmony, bringing structure and balance with a long, lovely finish. This wine should evolve and age with grace throughout at least the next two decades. Arrowood 2002 Reserve Cabernet Sauvignon is a true pleasure to enjoy on its own, and pairs well with many different foods. Serve it with grilled meats or seafood, or favorite pasta topped with a rich, bold red sauce.

By blending lots from a variety of sources, Richard Arrowood is able to capture the character of the vintage and the essence of Sonoma County Cabernet. The color is deep and youthful. The nose is a mix of ripe dark fruits, cassis, sandalwood and violets. The palate is rich and mouth-coating with tannins that are clearly present, yet beautifully integrated. This is a delicious, full-bodied Cabernet that will bring great pleasure over the next decade.

As you drive over the mountain from St. Helena, the valley opens up before your eyes and you immediately feel transported to another time, where things are slower and more rustic. This wine captures that place with great intensity of black fruit aromas and flavors that continue to a long satisfying finish. -Laurie Hook, Winemaker To maintain the unique characteristics of the different lots from varying areas of the vineyard, Laurie kept them all separate through vinification and aging. Extended maceration extracted a maximum of color, aromas and flavors. The wines were then aged in small French Nevers oak barrels (30% new) for sixteen months. After aging, Laurie blended the lots of Cabernet Sauvignon to highlight Knights Valley's characteristically bright black cherry fruit. The wine also has toasty oak, vanilla, cedar and smoky aromas accented by a pretty background of pink peppercorn, cocoa and mint. Small amounts of Cabernet Franc and Petite Sirah were added for additional complexity. A full mouth of sweet, zesty and rich black fruit is supported by nice bright acidity and ripe tannins. An appealing wine showing likeable softness and flashy flavors. The palate brings cassis, mocha, licorice, sweet tobacco, sage, Asian spice and smoky oak; finisheds long and rich. Red Wine by Chateau St. Jean from Sonoma County, California. This wine consists of Cabernet Sauvignon (88%) blended with Cabernet Franc (10%) and Petit Verdot (2%). After a combination of open and closed-top fermentation, the wine was barreled down for 15 months in two-thirds French oak and one-third American oak. Once the barrel selection was made, the wine was assembled and bottled. Inviting aromas of blackberry, black tea and wildflowers begin the nose of this Sonoma County Cabernet Sauvignon. The intense fruit carries through to the finish, when chewy tannins come to the fore and linger with fruit on a lasting finish. Individual, high-quality batches of Cabernet Sauvignon grapes from steep hillside vineyards in Alexander Valley and an incredibly rocky site in Knights Valley form the core of this wine's character. Each batch was fermented separately in small lots. After racking off lees, the resultant wines from the vineyard selections were further selected on quality and style, to produce the final Reserve Cabernet blend. The blend was then matured a further 12 months in a combination of new and used American oak barrels to integrate both the vineyard and oak components. The wine has not been fined or final filtered.

The growing season of 2004 had a light crop which contributed to the intense character of the vintage fruit. The harvest concluded with warm fall weather which further concentrated the flavors.
