A late ripening concentrated the flavors while also assuring that the ying and yang of the fruit-the acid and sugar levels-were in perfect balance. The result is a rich, juicy Cab with an expressive nose of cassis and spice. Flavors of black cherry and cocoa dominate this silky wine, but there are also hints of eucalyptus and mint. The 2005 is 90 percent Cabernet Sauvignon with small amounts of Merlot, Cabernet Franc and Petit Verdot filling out the remainder of the blend. Try this wine with braised short ribs or a creamy Camembert.

Red Wine by Arrowood from Sonoma County, California. Arrowood 2002 Reserve Cabernet Sauvignon is an outstanding California Cab from start to finish. In 2002, when the harvested grapes went through the press, Richard Arrowood noted the juice's intense black fruit flavors and unbelievable aromatics and colors. He foresaw a blockbuster year for this fabulous vintage and he was right on the money. The majority of fruit for the 2002 Reserve Cabernet Sauvignon was grown on hillside vineyards in the Sonoma Valley; a region known to yield some of the most concentrated and balanced Cabernet Sauvignon in Sonoma County. After aging lots separately in seasoned French oak barrels and a small amount of American oak barrels for 23 months, only the finest was selected to blend and return to French oak barrels for another five months of aging. The resultant wine is a perfect vision of violet with purple hues and tones of brick-red around the edges. It shows certain richness and there is no shortage of complexity. Rich aromatics of black cherry, cassis and leather introduce the palate to a symphony of flavor profiles with black fruit in the forefront of undertones and overtones of plump, ripe fruit in this full bodied wine. The tannins are in harmony, bringing structure and balance with a long, lovely finish. This wine should evolve and age with grace throughout at least the next two decades. Arrowood 2002 Reserve Cabernet Sauvignon is a true pleasure to enjoy on its own, and pairs well with many different foods. Serve it with grilled meats or seafood, or favorite pasta topped with a rich, bold red sauce.

Since 1981, when Winemaster Ed Sbragia first began blending the most expressive components from Beringer's best vineyards to craft the Private Reserve Cabernet Sauvignon, he and Bob Steinhauer, vineyard manager at the time, worked steadily to identify Napa Valley sites that they thought could be developed into producing the rich, intensely colored and flavored Cabernet Sauvignon grapes that Ed requires for the Private Reserve. In 2002, Ed had six reserve-potential vineyards to draw from, choosing the best lots after vinification and aging for a well-balanced, full-flavored final blend. Aromas of cassis, black cherry, cedar and dark chocolate transition to rich expressions of black fruit, vanilla and brown spices on the palate as ripe supple tannins linger throughout the extracted and long finish. ...This wine is delicious yet promises to age gorgeously for 15-20 years. Ed Sbragia compares it to the 1992 which, by the way, is drinking superbly in 2005, but is one of those rare vintages that has never gone through a closed period. As you drive over the mountain from St. Helena, the valley opens up before your eyes and you immediately feel transported to another time, where things are slower and more rustic. This wine captures that place with great intensity of black fruit aromas and flavors that continue to a long satisfying finish. -Laurie Hook, Winemaker To maintain the unique characteristics of the different lots from varying areas of the vineyard, Laurie kept them all separate through vinification and aging. Extended maceration extracted a maximum of color, aromas and flavors. The wines were then aged in small French Nevers oak barrels (30% new) for sixteen months. After aging, Laurie blended the lots of Cabernet Sauvignon to highlight Knights Valley's characteristically bright black cherry fruit. The wine also has toasty oak, vanilla, cedar and smoky aromas accented by a pretty background of pink peppercorn, cocoa and mint. Small amounts of Cabernet Franc and Petite Sirah were added for additional complexity. A full mouth of sweet, zesty and rich black fruit is supported by nice bright acidity and ripe tannins. An appealing wine showing likeable softness and flashy flavors. The palate brings cassis, mocha, licorice, sweet tobacco, sage, Asian spice and smoky oak; finisheds long and rich. It is referred to in history books as the Castle. The house sits a few hundred feet above the San Francisco bay and commands a 180 degree view of the bay. In its golden days it was a distribution center for alcoholic libations during prohibition. It is complete with tunnels, hidden caves, and has been the home of actors, authors and entrepreneurs. Today, slightly improved for today's lifestyle, it is the residence of the Bialla family. All fruit in this fine Cabernet Sauvignon is estate grown. Bialla's goal is to spare no expense in making the finest wine possible, with a maximum production limit of 500 cases per year. This is a rich Cabernet true to Napa's world famous style. Syrah continues in this vintage as Bonterra's unconventional blending grape for Cabernet Sauvignon, giving intriguing elements of spice and deep rich flavors sometimes not so attainable from the more traditional Merlot or Petite Sirah. Over the past seven years Bonterra has been privileged to work with Christian LeSommer, formerly of Chateau LaTour, to refine away the rough edges of their Cabernet to allow an elegant, near Old World styled wine to emerge. This Cabernet offers New World aromas of Bing cherry, currants and raspberry, with spicy notes of cedar and dried cranberry, with slight vanilla notes (French Vanilla, of course). In the glass you'll find juicy red berry flavors, and a very approachable, rich and full mouthfeel with a lingering, thoughtful finish. Good structure, polished yet soft tannins promise an ever more pleasing wine to come, with lively acidity and subtle spice. Red Wine by Brassfield from North Coast, California. Brassfield High Serenity Ranch Cabernet Sauvignon is filled with aromas of dark fruits, lavendar and hints of cocoa and bay laurel. The inviting aromas of the wine open to a medium bodied mouth-feel and a framework of delicate tannins with a hint of barrel toast. This wine has a reasonable aging potential of 5 to 10 years, but its inherent softness invites it to be enjoyed today. This Cabernet is a proprietary blend sourced from two vineyards on High Serenity Ranch. The Monte Sereno Vineyard makes up the majority of the blend, and is located at 2100 ft. in elevation on the western slopes of High Valley. The soils on this ridge top are primarily broken shale characteristic of Franciscan formation with a light dusting of red volcanic soils intermixed. Cabernet Sauvignon, Cabernet Franc, and Petite Verdot are three of this wine's varietal components. These four vineyard blocks have a southern exposure ensuring softer tannin development, and full fruit maturity for these late ripening varietals. The other Bordelaise varietal in this blend is Merlot which is located on the northern slopes of a southern exposed bench.

Special Selection is the name we chose with the first vintage, 1975, to indicate grapes that stood above the others from the moment of harvest through oak barrel aging and, finally, the selection of the blend that we felt deserved this designation. Over the decades, we have continued to recognize the superior character of specific vineyard blocks vintage by vintage. We have also secured long-term farming control-including planting, allowing us to select our preferred rootstock and clones-of Napa Valley vineyards with different slopes, elevation and climates. The primary aromas are of black currants, blackberries, brown spices and dark-roasted coffee beans.
