The nose shows intense blackcurrant fruit, cedary cinnamon spice barrel ferment & oak derived aromas, violet and mint scents as well as liquorice & chocolate smells. These are followed by a typically firm but fine-grained tannin extended texture overlaying soft plum which deceptively disguises the rich powerful cassis and blackcurrant flavors. The emphasis is on powerful full-bodied varietal fruit flavor integrated with barrel fermented and oak matured characters falling into the cedary, smokey and cashew spectrum. The 2002 Coppermine Road Cabernet Sauvignon possesses a sweet perfume of roasted herbs, black currants, blackberries. Lead pencil shavings, and background oak. Red Wine by Marquis Philips from McLaren Vale, Australia. This wine was 100% barrel fermented in new and 1 year old oak (30% French, 70% American oak.) and barrel matured for 12 months. The 2005 wines show generous and concentrated fruit and this Cabernet is a great example with its flavors of blueberries and cassis. It has silky, smooth tannins resulting from utilizing age-old cap management techniques. The wine shows some cedary, cigar box oak influence along with its bold fruit expression. Made from 100% Cabernet Sauvignon, the 2005 Cabernet receives a similar wood treatment to the Merlot, resulting in a big, thick, juicy, fresh, classic South Australian red offering bold, exuberant, blackberry and cassis fruit intermixed with striking vanillin and pain grille characteristics. With superb texture as well as a full-bodied, powerful finish, this amazing Cabernet should drink well for 4-5 years. - The Wine Advocate

Red Wine by Tintara from McLaren Vale, Australia. The McLaren Vale region is strongly maritime influenced, with considerable variation in climate between the hill slopes and the sea. The hills produce favorable seasonal rains while the coast brings ripening sunshine softened by cooling breezes. Tintara fruit is 100% McLaren Vale and includes only the absolute best lots from both estate-owned and contracted vineyards. The vineyards age to 70 years and these provide the dense character and powerful dark fruit aromas found in Tintara. The fruit for this wine was destemmed and crushed into 4 and 7-ton open-top fermenters. The wine was tasted 3 times daily and the fermentation temperature and extraction regime adjusted at each tasting to maximize flavor extraction, keeping tannin in balance with the fruit intensity. When the tannin and fruit balance were extracted to the desired level, the wines were basket pressed to tank. After settling for 24 hours, the wine was racked into French oak barrels. The 2002 vintage is ripe and juicy in flavor with currants, black fruits and a rich palate of leather, earth and spice, giving way to a long and balanced finish.

The 70-year-old vineyards provide the dense character and powerful dark fruit aromas. Appearance: Vibrant deep red with crimson hue. Aroma: Ripe dark berries and black currant accented by hints of plum. A touch of anise and cinnamon are accompanied by subtle notes of leather.
