Located in Reims, France, Champagne Mumm is a grande marque whose reputation has been built over the past 175 years by providing connoisseurs with Champagnes of distinction and elegance. Especially prepared to meet American demand, Mumm first released a demi-sec Champagne in 1888. Today, the celebrated Champagne House creates a new demi-sec named Joyesse which means To exist in joy and is intended to provide a transcending experience. Crafted by dynamic young Winemaker Dominique Demarville, each glass of Joyesse is infused with Mumm's long-standing passion for terroir, advanced winemaking techniques and a meticulous approach to blending. The cuvee is a blend of 50% Pinot Meunier, 35% Pinot Noir and 15% Chardonnay, of which one quarter are reserve wines. Pinot Meunier from Vallee de la Marne impart a fruitiness while the addition of Chardonnay and Pinot Noir grapes, as well as the reserve wines, contribute a pleasing complexity. At disgorgement, a special liqueur d' expedition of aged wines is infused with 44 grams of sugar per liter to add further complexity, smoothness and richness. Joyesse opens with layers of smooth, honeyed, well-rounded flavors of ripe white pears, juicy plums, yellow peaches, finishing with candied ruby grapefruit. Joyesse can be enjoyed with a spicy Indian or Thai dish or with dessert such as a peach cobbler, apple tarte Tatin or a berry tartlet.

Non-Vintage by Roederer Estate from North Coast, California. Roederer Estate Brut, the first California sparkling wine produced by Champagne Louis Roederer, builds upon a 200-year tradition of fine winemaking that has made Roederer champagne among the most sought-after in the world. Roederer's winemaking style is based on two elements: ownership of its own vineyards and the addition of oak-aged reserve wines to each year's blend or cuvee. All the grapes for the Anderson Valley wines are grown on the Estate. Each year, the winemaker selects a portion of the best wines for aging in Center of France oak casks. Aged from one to three years, wines from this reserve cellar are added to the blend, creating a multi-vintage cuvee in the traditional Roederer style, known for its body, finesse and depth of flavor. The Roederer Estate Brut debuted in October 1988, and has since established its reputation as one of California's premier sparklers, remaining true to the heritage of excellence and style of its French forebears.

Non-Vintage by Ruinart from Champagne, France - regions. The wine is a brilliant orange-yellow rose petal colour with a very fine, profuse and sustained mousse. The nose is characterized by small red berries, mainly currant. On the palate the wine is vigorous and well balanced. A fine, fresh, fruity wine with well-integrated tannins and a hint of spice on the lengthy finish. Ruinart Rose is produced from a blend of 55% Pinot Noir and 45% Chardonnay from the best of recent vintages. All of the fruit is from premiers crus vineyards. Grapes from the estate vineyards in Sillery and Brimont (ancestral home of the Ruinart family) are joined by carefully selected grapes from other premiers crus vineyards in the Cote de Blancs and the Montagne de Reims. The grapes for Ruinart are selected basket by basket at the source, and only the finest premiers crus are used.

Non-Vintage by Scharffenberger from North Coast, California. Scharffenberger Brut is made by the traditional methode champenoise process - whereby the wines are individually bottle-fermented before being riddled and disgorged. The wine is approximately two-thirds Pinot Noir and one-third Chardonnay and undergoes 100% malolactic fermentation. Scharffenberger Brut is made from its own 120-acre vineyards in the Anderson Valley. In addition, Scharffenberger Cellars has long-term contracts with select vineyards in the greater Mendocino County. This type of vineyard selection allows us to choose from the best vineyards in the area which enables us to produce our trademark cuvee. The wine is two-thirds Pinot Noir which produces a red fruit (cherry and plum) forward nose combined with one-third Chardonnay which adds the tropical expression of litchi nut and mango. The 100% malolactic fermentation adds a vanilla cream character producing a round and full-bodied wine. After approximately two years on the yeast lees, there are notes of freshly baked bread and pastry that enhances the more fruit forward style of the wine. Finally, after several months on the cork the wine develops caramel and hazel complexors. Fresh aromas of butterscotch and croissant with yeasty, bakery notes. Bright peach and apricot flavors with a green apple tartness. Fresh, steely close with a mix of lemon drop and minerals. -Wine News

This Champagne is a blend of some 30 Chardonnay and Pinot Noir vineyards, respectively 40% and 60% of the total, from several harvests of perfectly ripened grapes. Non-Vintage by Taltarni from Australia. Tache is a French word meaning 'stained', referring to the pale salmon colour of this enticing sparkling wine. The Chardonnay, Pinot Noir and Pinot Meunier grapes are estate grown at Taltarni and Clover Hill, Tasmania. Pinot Noir and Pinot Meunier are picked by hand and Chardonnay at night to retain freshness and acidity. Specially selected Pinot Noir or Malbec is added to 'tache' the wine after disgorgement, resulting in a zesty sparkling wine of rosy hue and a refined freshness. Disgorgement is after a minimum of 18 months on lees in its original bottle.

Non-Vintage by Veuve Clicquot from Champagne, France - regions. The Champagne produced today by Veuve Clicquot still lives up to the high standards set by Madame Clicquot, a young widow (veuve in French) who took over her late husbands estate at the beginning of the 19th century. It was Madame Clicquot who developed the important riddling procedure for Champagne--a way to remove dead yeast cells from bottles.
